This Saignée expresses itself particularly through its powerful red fruit flavours. This Champagne is made from 50% Pinot Noir and 50% Meunier from Chigny-les-Roses. Its taste is balanced between silky and velvety, reminiscent of the caress of a rose petal.

A unique cuvee from our House, this ‘saignée’ expresses itself particularly through its powerful red fruit flavours and comes from our Premier Cru classified vines in Chigny-les-Roses to create this 2012 vintage. The “Saignée” process is the maceration of the Pinots Noirs and Meuniers together in concrete tanks together (between 24 and 48 hours) and then racking of the coloured juice, called “saignée”.
Optimal serving temperature is between 8 and 10°C (46 to 50°F).
COLOUR: A deep rosé with redcurrant highlights.
NOSE: The nose opens with aromas of bitter orange, nuanced by gourmet notes reminiscent of pastries (frangipane, hazelnut, a hint of butter). Notes of Amaretto and strawberry jam complete this harmonious ensemble.
PALATE: The attack is fresh, without ever assaulting the palate. The structure is very present, supported by delicately powdered tannins. The jammy flavours of morello cherry and strawberry persist, while citrus notes, particularly kumquat, add an exotic touch. Long on the palate.
WINE TASTING VIDEO:
This Rosé de Saignée makes a magical, fresh and savoury accompaniment to duck with cranberries or roast veal with blood orange jus. The fruity, full-bodied flavours of the wine will echo the acidity of the sauce and jus. As a cheese, it goes well with a very mature Gouda. And for dessert, the tart ganache with bitter dark chocolate and raspberries is a must, where the fruity aspect of the champagne will soften the bitterness of the chocolate and the spicy touches of the rosé de saignée will bring out the aromas and deliciousness of the fruit itself. Or with a platter of mignardises, consisting of panna cotta with red fruit coulis and petits financiers.
